Reuben Sandwich

This is the perfect sandwich recipe if you have leftover corned beef from the night before. I love making dinners where I can use the leftovers for a completely different meal. This one is great!

Ingredients -

8 Slices Rye Bread
1/2 Pound Sliced Corned Beef
8 Ounces Sauerkraut
4 Tablespoons Thousand Island Dressing
4 Slices Swiss Or American Cheese

 
Preparation:

1. Butter both sides of all of your rye bread.

2. Brown one side of the rye bread in a large skillet.

3. Add the corned beef, sauerkraut and Thousand Island dressing to the toasted side of your bread.

4. Top with slices of Swiss cheese.

5. Top with the bread toasted side down.

6. Place back into the skillet and pan fry until the cheese is melted.

7. Serve immediately.

If you are going to have a party and you want to include a cheese plate then after it is prepared store it in the refrigerator. When you plan on taking it out make sure that you allow some time for the cheese to come up to room temperature.

Mozzarella cheese freezes well when sealed tightly in plastic. This is nice for thawing cheese quickly to make appetizers.
