Sausage And Peppers Sandwich

I know I always so one of my recipes is one of my favorites but the pork family is for sure one of my favorites and I love sausage so very much. Hot Italian sausage is amazing to me and I love that I just throw it in a pot and come home to a delicious meal and it’s a yummy sandwich that I can eat for days.
Ingredients -
4 Large Sweet Peppers of Assorted Colors (seeded and sliced)
1 Large Onion (cut into wedges)
1 Package Hot or Sweet Italian Turkey Sausages (20 oz)
1/4 Cup Red Wine Vinegar
1/2 Teaspoon Dried Thyme
1/2 Teaspoon Fresh Cracked Black Pepper
1 1/2 Tablespoons Cornstarch Mixed With 2 Tablespoons Water
1 Tablespoon Dijon Mustard
6 Multigrain Submarine or Hoagie Rolls
 
Preparation:

1. In a crock pot combine peppers, onion, sausages, vinegar, thyme and pepper.

2. Cook on high 3 hours or low 6 hours.

3. Remove peppers and sausages from the crock pot and set aside.

4. Keep warm.

5. Heat the broiler.

6. Pour the liquid from crock pot into a saucepan.

7. Whisk in the mustard and cornstarch.

8. Bring it all to a boil and boil approximately 1 minute or until thickened.

9. Slice the rolls almost all the way through lengthwise.

10. Place them on a baking sheet cut side up under the broiler for 2 minutes or until they are toasted.

11. Cut the sausages diagonally into 1/2 inch thick slices.

12. Stir them back into the pepper mixture.

13. Place 1 cup of the sausage mixture on each of the rolls.

14. Drizzle each of the sandwiches with 2 tablespoons of the sauce.

15. Reserving the remaining sauce for dipping.

16. Serve immediately.

Bell Peppers
The bell pepper is the most common sweet pepper so you can use red, green, orange or yellow bell peppers in this recipe which are easily found in any grocery store and all are wonderful in this recipe.

Sausage
This is definitely a recipe you need to experiment with. The type of sausage you use whether it is the sweet Italian sausage or the hot Italian sausage totally changes the flavor of the sandwich. You must determine which you and your family and friends prefer. I love spicy food so I choose the spicy Italian sausage. I also add chili powder and jalapeno’s but that’s just me. Makes me sweat whenever I take a bite….yummy! I sure do need a napkin when I eat it but love every minute of it.
